C\u2019est de cette mani\u00e8re que la couleur et les ar\u00f4mes de la peau du raisin va se lib\u00e9rer pour teinter et aromatiser le jus de raisin. Ce processus peut durer jusqu\u2019\u00e0 20h pour obtenir la couleur d\u00e9sir\u00e9e pour le vin ros\u00e9. Au lieu de \u00e7a, les raisins sont press\u00e9s directement apr\u00e8s la vendange de mani\u00e8re tr\u00e8s lente et d\u00e9licate. Cela permet aux peaux de transmettre un peu de leur couleur au jus avant que celui-ci ne passe \u00e0 l\u2019\u00e9tape de la fermentation alcoolique.
